PANCAKES!

Pancake day was yesterday so of course I had to whip out my recipe for my (relatively healthy) American style pancakes. If you fancy making them yourself, here are the ingredients you'll need!

INGREDIENTS:

FOR THE PANCAKES


135g of plain flour
130g milk (I used almond milk)
pinch salt
1 large free range egg
2 tbsp caster sugar
1 tsp baking powder
2 tbsp melted butter/olive oil (I used coconut oil)


FOR THE BERRY SAUCE

1 cup mixed berries
1 tbsp honey
juice of 1/2 a lemon
1/2 tbsp sugar
1 tsp cinnamon
1/4 cup water



METHOD:

PANCAKE BATTER
  1. Sieve the dry ingredients together into a bowl (flour, baking powder, salt, and sugar)
  2. Lightly whisk together the milk and egg whilst slowly adding the melted coconut oil)
  3. Slowly add the wet ingredients to the dry ingredients whilst whisking (alternatively, I used my blend active to mix the ingredients together)
  4. Leave the batter to stand whilst you prepare your berry sauce.


BERRY SAUCE
  1. Start by adding the berries and water to a pan over a medium heat
  2. Squeeze half a lemon into the berries and add the honey and sugar
  3. Leave to boil for a few minutes whilst stirring constantly
  4. As the sauce begins to thicken, lower the heat to a simmer
  5. Add the cinnamon and stir
  6. Lower the heat even more whilst you cook the pancakes.



PANCAKES
  1. Heat up a small frying pan and add a small amount of coconut oil 
  2. Pour the batter into the pan once it has heated up (I tend to keep the heat low/medium)
  3. Once the has started to develop bubbles (approx 1-2 mins), get your spatula and carefully flip the pancake.
  4. Leave the pancake to cook on the other side for an additional 1-3 mins (depending on how cooked you like them)
  5. Transfer the pancake to a plate and put into the oven to keep warm whilst you make the rest.
  6. Serve with the berry sauce (or whatever else you like!)



All that's left to do is eat them! This recipe makes approx 5 pancakes.
